Updates:

All right, so I think I am back on track. My weight at home is showing 224 morning weight up to 226-227 evening weight now. I also went shopping in my closet and found my old(er) jeans fit, and a pair of capris I haven’t been able to wear in a long time (unfortunately it’s now fall and darn cold, so those aren’t much good to me).

My Birthday!

Yesterday was my 25th birthday, and while I had some emotional moments, it was wonderful. My husband had little pity for my moping over my 25th milestone, as he is 30+. However, my most awesome husband got the wife of a friend of his to make me a homemade chocolate cake with … A PENGUIN ON IT! I’ve collected penguins for years, and yet in all of our 7+ years together, he never thought to get a penguin cake. LOL

For dinner he asked if we could have, ‘fat food’ (a joke, of course) so I had nachos with cheese, green pepper, and green onion and salsa, and he had loaded nachos with pepperoni, etc. Of course, making them yourself at home and controlling the cheese and number of chips REALLY helps keep calories in check at the very least. I managed to keep a nice big plate of nachos surprisingly close to my 500 calorie mark for dinner. I DID however, forget to take a picture. Rest assured, they looked delicious, though had way less cheese than I would have put on 2 months ago. Even still, I never was one for too much cheese on nachos because it makes them too greasy and soggy. My husband, however, ahs a different theory on nachos. *laughs*

And now for some of my recent eats, to catch up:

Stuffed zuchinni boats (zuchini, Laughing Cow Garlic & Herb, Light Feta, mushroom, chive, green pepper, spinach), sweet potato baked withy olive oil and chili powder, and chicken breast baked with olive oil/rosemary.

Light Caesar Salad, Grilled Cheese and Tomato Soup. With a bit of care, this was a surprisingly low calorie dinner. Well under the 500 mark.

…Fell off the Healthy Wagon. Sort of.

All right, so my theory that stress causes me to exercise less and eat more junk has proven true this week. This past week was a bit more stressful than others recently, and I found myself resorting to wanting sweets, namely, and getting lazy with my regular eating and exercise.

I’m pretty disappointed in myself, and doesn’t look like I’ve lost any weight in the past week, sadly. SO, starting tomorrow, back on the wagon. I think I am going to need to keep up with the calorie counting, since it seems to keep me better focused. So here are my goals for getting back on track this week:

1. One glass of water per hour while at the office or during day at home.

2. While pushing myself to the one hour exercise every day makes me avoid it, I thinki setting a 30 minutes one day, 60 minutes the next, pattern might help me keep at it.

3. Need to buy some more fruit and yogurt, because I’ve resorted to sweet treats too much lately.

4. Cut back on breads/starches again… while I seem to be keeping my portion skzes in control still, I am letting higher calories foods, and perhaps too many breads/grains.starches creep back into my diet (ie: regular add water pancake mix because it’s just so easy, bread based foods like bruschetta, and pasta …. though I did stick to very small portions and whole wheat).

5. Get back onto a better schedule and try to eat dinner earlier again. I seem to do best the days I am in the office, though lunch was running late this week with some hectic things going on at the office.

I CAN do this. I just need to get focus again. I am not going to let this weight beat me this time. No way. Just because one week fell shiort and I got off track doesn’t mean I’ve lost all hope… I can get back on track. I can dot his. I want/need to do this.

I did make some meals and foods worth posting over the week, and will post them tomorrow night, as the first step of getting back on the wagon! Thank you to everyone reading – knowing I had to come back here and share my lapse in progress really gives me motivation to re-focus and concentrate on the goal ahead – accountability to friends, family, and internet strangers alike!

Breakfast Bonanza – Treated Myself!

So I got up this morning and thought, ‘It’s Saturday – I can take some time to make breakfast!

I felt like an egg sandwich, but of course, wanting to keep the calories down, got creative with my grocery shopping yesterday. I picked up a carton of egg whites, some turkey bacon, and some Monterey Jack cheese, for a change, since the slices were on sale. I also bought a tonne of English muffins, as they were on buy one package, get two packages free. For this week’s snacks, I bought 1% cottage cheese, and strawberries (Dole brand) which were on sale for $3.99 for a giant carton.

SO, this morning the logical choice was – and egg sandwich, made with (more) healthy ingredients, with a side of cottage cheese and strawberries. The end result was this:

This included:

  • One toasted English muffin (140 calories)
  • Few pieces of green pepper and 1 mushroom sliced (to which the egg white mixture was added)
  • 1/4 c. egg whites with sea salt, pepper, Worcestershire sauce, and a bit of 2% milk. I only actually used half of this on my muffin, and gave the rest to my son. (Alone maybe 20 calories, but with above veggies, I’ll say 25 calories per half of the amount made)
  • One slice Monterey Jack cheese (90 calories)
  • 1.5 pieces of butterball turkey bacon (53 calories)
  • 1/4 c. of 1% Cottage Cheese (55 Calories)
  • 3 large strawberries (20 calories)

Total Calorie Consumption: 383 Calories

Today’s Plans:

Today is my best friend’s little boy’s first birthday party, so when my husband gets home from work, I am off to pick out a gift for him, and then later today we will head to the party. 🙂 My boy is VERY excited. He loves birthday parties. 🙂

19 Pounds Down, and Today’s Eats!

Weight Update:

So, this morning I weighed myself, and my morning weight was… *drumroll please* … 227 pounds!! This is 19 pounds down from my past morning weight!HURRAY!

This evening, after eating all day, I weighed myself again, out of curiosity, and my evening weight was 228.5 pounds! This is down from my previous average evening weight of 26-249 pounds! HURRAY SOME MORE!

I was having trouble believing the weight loss had made any difference, despite my husband’s protests, until I put together my ‘before’ pictures and my ‘weight loss to date (as of today)’ pictures. I can REALLY see a difference. Unfortunately, I’m not quite comfortable sharing these photos with the world yet, but I will hang on to them and continue adding new photos along the way, and when I am where I am comfortable, I will show you all the progress! 🙂

My stomach has flattened, and my massage therapist friend noted in the pictures that she can see my abdominal muscles coming forward… from the front view, I’ve lost the round pregnant firm belly look, and while it is looking less firm, it is also decidedly narrower at the waste, and showing some shape. VERY COOL for me to see! Totally makes this worth while!

Today’s Eats – Breakfast:

Pumpkin Oatmeal With Vanilla Yogurt:

I cooked some rolled oats, and added pureed pumpkin, pumpkin spice, and brown sugar toward the end. In the bowl I added a drizzle of maple syrup and some vanilla yogurt. SO tasty!

Today’s Eats – Snacks & Lunch:

  • A Deep Chocolate VitaMuffin for my morning snack
  • A Dempster’s BodyWise Whole Wheat sandwich with cheese, spinach and turkey (tomato basil deli) and ham (rosemary deli)
  • Some goldfish crackers – I know, bad, but in the scheme of crackers, they’re not all that bad
  • A bite of a Chocolate Almond Fudge Clif Bar, to see if I liked it – I LOVED it – but gave the rest to my munchkin, who thoroughly believed it was a cookie
  • A bite of the Pecan Pie Larabar, just to taste. I was very unimpressed – I’ll be honest. Even the munchkin wouldn’t eat it. That’s a bad sign. He eats anything perceived as a ‘treat.’ I bought a couple of others to try though, and am hoping for more luck. We don’t have any of the chocolate flavored ones here for some reason (Jocolat).

Todays Eats – Dinner:

  • One proper portion (possibly less) of steak, sliced and cooked in a frying pan (no oil or grease) with Worcestershire sauce
  • Raw carrot, green pepper and mushroom dipped in Renee’s Wellness Yogurt Peppercorn Dressing (SO DELICIOUS!) – I couldn’t finish all of the veggies, and my munchkin was more than happy to finish them off for me!
  • One bottle of POMx Pomegranate Peach Passion White Tea. This tasted absolutely fabulous, but after realizing pomegranates are apparently a growing allergen, and knowing my own issues with mango and kiwi, I panicked and put it away in the fridge after drinking a bit. Gosh it was SOOOOO good though.

Tomorrow I’m planning to try a nice whole wheat pizza dough recipe I found – I didn’t tackle it tonight because it takes and hour or two to make/let rise. Can’t wait to share with you all how THAT goes – I’m not known for my pizza doough-making skills….

Whew! Busy week… a rundown of the week’s eats!!

So, I’ve been pretty busy, and alternately exhausted this week, so I’d not managed to post much.First, weigh-in was Monday for the office’s Biggest Loser – I was down another 3 pounds for 10lbs total since the competition started 3 weeks ago.

Per my scale, I’ve now cracked the 220’s and am down to 228 – so that’s 18 pounds so far! WOW! In just under one month! I can totally do this!

I’m just getting back into my exercise routine after taking it easy due to an injury to a muscle in the back of my leg (calf).  Boy I missed it!

I DID however, take as many pictures of what I was eating as possible, and here is an update!

Dinner, Monday Night:

I caved and decided to have a bit of red meat. I took a proper portion (about the size of a deck of cards), and sliced it up thin. I then chucked it into a frying pan with Worcestershire sauce, no oil. I cooked covered on medium-low for a few minutes, then cranked up the heat and took the cover off to fast fry it and soak up the worcestershire. I actually burnt mine a bit because I wasn’t paying attention – definitely DON’T do that. Hehe.

As a side, I threw a bag of frozen veggies and some corn in a pot, along with a bit of water and some oriental spices and soy sauce. Basically a heat and serve type of deal.

Breakfast Tuesday:

  • Rolled oats, topped with pumpkin puree mashed with some brown sugar and cinnamon, and some vanilla yogurt

Dinner Tuesday Night:

  • Butternut Squash, diced up and baked with sea salt for about 1/2 hour on 425 degrees
  • Some sliced cheddar and green pepper
  • Chicken breast stuffed with rosemary deli ham (just a few cut squares out of a slice for flavor), brushed with olive oil, sprinkled with rosemary and baked – and of course served on spinach – because I LOVE spinach!

Tuesday Eats, no pictures:

  • Breakfast – Rolled Oats with blueberries & yogurt
  • Frozen serving of the chicken soup I made a couple of weeks ago, plus two pieces of Dempster’s Bodywise whole wheat bread with local honey
  • Snack – Vanilla yogurt, Blueberries w/ Kashi Go Lean sprinkled on top – I served this to my coworkers at the office actually
  • Snack – A pear diced up and baked with cinnamon

Dinner, Wednesday Night:

I was craving something different, so I picked up some salmon, cut into chuncks, and baked in a casserole dish with some maple syrup, soy sauce, and garlic. DELICIOUS!

I also wanted to try asparagus. The aspragus I tossed in a tbsp. of olive oil, garlic, and black pepper, and baked ina casserole dish. When it was almost done, I sprinkled on some parmesan cheese as well. Again, great dish, and SO easy!

I had also picked up some tri-color chickpea salad from Sobeys grocery store – the fresh foods/deli aisle. It was betwene this or the 12 grain salad, but they had hte 12-grain loaded with curry, and this was more a sweet tangy dressing, so I chose this one.

Other Wednesday Eats, no pictures:

  • Snack – I made pita pizzas and divied up small chip sizes pieces to my coworkers. On the pita pizza was some pesto, spinach, rosemary deli ham slices, and light mozzarella. It was a hit! Wish I had taken a picture!
  • Lunch – Serving (1 c.) of the leftover chicken soup I froze a couple of weeks ago, with some green pepper and chedder on the side.

Thursday Breakfast:

  • I bought Speerville’s Certified Organic Buckwheat Pancake Mix, so tried it this morning. Three small pancakes – one with maple syrup, one with E.D. Smith (no sugar added) raspberry jam and vanilla yogurt, and one with pumpkin puree, cinnamon and vanilla yogurt.
  • The pancakes are quite heavy, so take some getting used too – but very good.

Thursday Lunch:

I had a light lunch. I was making white meat chicken fingers for Kaiden, as they were on sale at Superstore this week. So I baked myself two as well, and threw them in a whole wheat tortilla smeared with pesto and rolled in with spinach. I added the rest of my chickpea salad to the plate as my side as well.

Thursday Supper:

  • My new favorites – my chicken with Classic Red Wine & Herb Sauce on a bed of spinach, and homemade zucchinni sticks from one baby zucchini and served with the same red sauce.

RIP Patrick Swayze…. So Sad.

ABC, KTLA and TMZ are all reporting that Patrick Swayze has finally given in to his battle with cancer. I’m so sad right now… he was one of my favorites. May he rest in peace…. pain free. You fought a long, brave battle. Will always enjoy his films…. this weekend will be a Swayze marathon in memory.

… and now back to your regularly scheduled (workout) program!

So today I finally felt like my leg was up to my full typical workout! Yay! I’ve missed it. I feel as though working out has become almost an addiction – not the type of addiction I can complain about though!

Tonight’s workout was:

  • 40 minutes on the elliptical, various tension settings and speeds
  • 30 minutes of upper body weights and crunches/sit-ups

Nice and sweaty! Yuck – but at least that tells me my body’s working hard and calories have been burned! 🙂

And now, on to today’s good eats:

LUNCH:

  • Turkey(Basil-Sundried Tomato spiced – Sobeys grocery store – try it if you have one nearby)/Ham (Rosemary spiced – Sobeys grocery store – try it if you have one nearby) sandwich with spinach and mustard on Dempster’s Body Wise Whole Wheat Bread (90 total calories for two piecesmost likely because the bread is thin and airy – not much substance to it), and a side of butternut squash fries. Now, mind you, I used pre-chopped butternut squash from the grocery store, and I think the pieces that I cut from those were too small to brown before cooking, so they didn’t brown nicely or look like french fries as I would have liked. BUT – they were TASTY! Oh my goodness. Thanks to Jen for finding these on HungryGirl.com, and thanks to my sister-in-law Wanda for singing their praises when I ran into her at the grocery store today – I wouldn’t have bought them without that extra push!

Squash Fry Instructions: To make the fries I just sliced up the butternut squash a bit more, sprayed a cookie sheet with cooking spray, sprinkled some seea salt, and baked at 425 degrees about 2o minutes, then flipped and cooked for another 15.

DINNER:

Dinner was a hit with ALMOST everyone tonight, even the difficult husband! On the menu:  Chicken breast baked with Classico Red Wine & Herb Sauce, with a side of baked zuchinni sticks. I’ve seen a few recipes like this recently, so thought I’d give it a try. Unfortunately, my boy was not a fan of the texture of zuchinni – new to him – and it actually made him quite ill after he ate a couple and tried to spit them out. I guess we’ll have to ease him into the world of zuchinno some other way. He eats it in pasta sauce, but he can’t SEE it then. He DID however, devour his chicken!

Instructions:

  1. I used ‘baby zuchinni’ and slice the ends off, then sliced in half lengthwise, then half lengthwise again, and half width-wise. Thise made nice thick sticks. I patted these dry and set aside.
  2. Oven was alreayd on 425 degrees for the chicken, so no need to preheat in my case.
  3. I didn’t have bread crumbs, so I ground up 60% whole wheat melba toast in a bag with my hand marble rolling pin (that thing is HEAVY), and added parmesan cheese (powdered), oregano, black pepper, garlic, sea salt, and a bit of chili – TO TASTE. Sorry, I have no idea how much of each I put in.
  4. In a separate bowl, I beat one full egg and one egg white. I also read recipes where olive oil was used instead of egg to keep the crumb mixture stuck to the zuchinni, but I didn’t want to chance my husband not liking them – he’s not a fan of olive oil (yet), and didn’t want too much grease.
  5. I then dipped/rolled each zuchinni stick in the egg, plucked out with a fork, and dragged through the crumb mixture to coat, and set on an ungreased baking sheet.
  6. I baked at 425 degrees until the texture (soft, but a bit firm) was where I wanted it, then put on broil for about a minute to see if I could brown them more – didn’t work, but that’s okay! 🙂
  7. Served with warmed Classico Red Wine & Herb Sauce as dip.

Daddy's - he had a whole breast, while Mommy & Kaiden split one, hence why ours are cut up and Daddy's is not! There were a few more sticks left in the pan that Daddy devoured when he was done this plate too. :) Guess that means we have a winning combo!

Anyway, this is definitely something I’ll be making again, at least for mysewlf and Mr. Dee. I might try this with pieces of onion too – see if I can come up with some sort of baked onion ring creation. We’ll see!

I’m misbehaving and having a 1/2 cup of frozen yougurt – BUT it’s only 120 calories, and I have calories to spare today, so why not? Depriving myself won’t get me anywhere – enjoying treats occasionally and in moderation – now THAT’S the way to do it!
