Dinner & Lunch: The Chicken & The Egg

Well, actually, the egg didn’t come from the particular chicken I ate, but it sounded amusing.

Time to share some of my tasty treats since starting to watch what I eat! This will probably be the best part of this blog. Hehe.

Dinner (last night):

Chicken breast baked with a bit of Classico Basil Pesto on top (maybe 1 tsp. smeared over it), with a side of  tomato slices broiled with light powder Parmesan and a pinch of oregano/black pepper. Paired with a glass of ice water shaken with lemon juice concentrate and locally produced honey! 🙂

Breakfast (today):

1 cup of Kellogg’s Special K Red Berry topped with 4 small sliced strawberries to use up the last in the fridge, with 1/4 c. 2% milk, and a glass of ice water. Approximately 215 Calories.

Snack (morning, today):

1 cup of Vanilla Yogurt. Approximately 100 Calories.

Lunch (today):

A whole wheat pita topped with 1 tbsp. Classico Basil Pesto, 1 tbsp Ricotta cheese, 1/2 tbsp. light Parmesan, and a bit of light mozzarella, baked in the oven at 425 degrees until bubbly. DELICIOUS! Added a boiled egg white I had cooked yesterday to the plate for 1/4 of my meat servings for the day. Estimated 360 Calories.

These were definitely tasty. I have a few other meals I’ve made since I got started that I’ll share later as well, such as Black Bean Burgers, and Chicken Chili Verde.
